Spicy Citrus Grilled Chicken Wings and Veggies

Spicy Citrus Grilled Wings

  • 1/4 cup soy sauce
  • few drops of sriracha chili sauce
  • a couple pounds of chicken wings, cut apart at joints, wing tips discarded
  • 1/2 cup of O.J.
  • 1 lime and a splash of lime juice
  • 1 tablespoon garlic powder
  • 1 teaspoon ginger powder
  • few grinds of Jamaican black peppercorn
  • a dash of paprika
  • parsley

FYI: rather peckish has no analytical chemistry training.  Therefore, amounts are never completely accurate.  They are more like starting points.  So season everything to your taste.  A little blander, a little spicier, slightly more acidic: whatever tickles your fancy.  Or shall we say taste buds...


Directions
  1. To make the marinade, combine all the ingredients except the chicken in a zip-lock bag.  Taste it.  If you are satisfied, add the wings.  If not, adjust the seasoning before adding the wings.   Seal the bag and give the bag a good shake so the wings are completely coated.  Refrigerate for at least a couple of hours. 
  2. Preheat an outdoor grill at high heat.
  3. Grill the wings on high heat for a few minutes and then turn the down the temperature to medium low.  Turn the wings occasionally and cook until the chicken is golden.  This will take between 25-30 minutes.
  4. Place grilled wings in a large bowl. Squeeze on some fresh lime juice and you are ready to rock.

Roasted Veggies:

Take some of your favorite hardy veggies.  We used cauliflower, onions, and peppers.  Cut them into pieces ensuring they are not so small as to fall through your grill (see photo).  Put veggies into a large bowl and drizzle with olive oil, balsamic vinegar and add some s & p. Toss and let the grilling begin. When they are covered with beautiful grill marks, take them off the grill and drizzle with more olive oil, balsamic vinegar and s&p.  Garnish with fresh parsley and enjoy.  We most certainly did!  


Modifications:

This recipe works well with chicken thighs.  Actually, pretty much any part of the chicken will suffice.  You can use your favorite hot sauce if Sriracha is not your thing.  We do suggest something with a bit of heat. If you are feeling saucy add some orange and lime zest to the marinade to pump up the flavours..

This can also be made in an oven rather than an outdoor grill.  Pat the wings to remove excess marinade before placing them on a baking sheet.  In the middle rack, cook the wings in a preheated 400 degree oven for 20-25 minutes.  To ensure crispiness, cook them under the broiler for a few minutes.  DO NOT walk away when under the broiler.  You don't want to burn them!
